Tomato Hummus with Fried Capers

Did you know that you can make way more than just one type of hummus?

In fact, there are a lot of delicious variations that you can try at home, from red beetroot hummus, green parsley hummus, even to sweet chocolate hummus.

Today, you will discover a beautiful red tomato hummus.

Just like the traditional hummus, it's based on chickpeas. But this time, the flavor comes from a few additional ingredients that you don't find in the classic hummus recipe.

On top of that, you will add some fried capers - they add some clear saltiness and exciting crunchiness.

This hummus recipe brings you a Mediterranean flavor. It's the perfect addition to some homebaked bread - such as the gluten-free bread loaf or some homemade sourdough bread.

Ingredients

1 glass chickpeas (around 350 g or 12.3 oz)

70 g (2.5 oz) tomato paste

1 onion

2-3 garlic cloves

1 pot of basil

100 g (3.5 oz) cocktail tomatoes

1 small glass of capers (60 g or 2.1 oz)

Sunflower oil

Salt

Pepper

Lemon juice

Optional: maple syrup

 

Instructions

  1. Chop the onion and garlic. 
  2. Fry them with a bit of oil at medium-high heat in a pan for 2-3 minutes, then add the tomato paste. Fry for another few minutes, then take it off the heat.
  3. Add the rinsed chickpeas as well as half of the onion-garlic mixture into a blender. Add 1 teaspoon of salt, a bit of pepper, and a dash of water. Blend everything till you have a homogenous hummus. Add more salt, pepper, or water if needed.
  4. Add the rest of the onion-garlic mixture and stir well. Chop the basil and cocktail tomatoes, add them to the humus. 
  5. Have a final taste and see if something is missing. 
  6. Lastly, fry the capers: Cover the bottom of a small pan with approx. 2-3 cm of sunflower oil and heat it up. Fry the capers in the oil for approx. 3-5 minutes. 
  7. Put them on a paper towel to absorb the rest of the oil.
  8. Serve the fried capers with tomato hummus.

Serving suggestion: This hummus goes perfectly well with the gluten-free bread loaf or the gluten-free bread rolls.
