Vegan Fish Burger

How about some savory fish burgers?

Wait, did you just read fish burgers? You sure did!

Well, it's not an actual fish burger... just tofu with some added flavor magic!

So next time you have friends over, why not give those a try?

And don't tell them its tofu until they've finished they whole burger.

Ingredients

200 g Tofu - thawed (all moisture squeezed out)

½  Nori sheet

50 ml (1.7 oz) Beet Juice or 1 small cooked beet blended until liquid

14 ml (0.5 oz) Lemon Juice (or the juice of one lemon)

14 ml (0.5 oz) Oil

1 tsp Garlic Powder

1 tsp Salt and Pepper

Breadcrumb (as needed)

Cornflakes (optional) (as needed)

Flour (rice flour works best) (as needed)

Vegan egg-wash  (see instructions below)(the simplest is rice flour mixed with a splash of soy

             milk until the right thickness  

Instructions

To make the vegan egg wash

  1. In a small bowl, add some rice flour with a splash of soy sauce until you get the right thickness. (see video for exact instructions).

To make the vegan fish burgers

  1. Cut the thawed tofu in half (so you have two equal size pieces). One block of tofu makes for two burgers.
  2. Prepare the marinade: blend together the nori, beet juice, lemon juice, oil, garlic powder, salt and pepper until smooth.
  3. Place the mixture into a bowl or reusable container, add the tofu and let marinade for at least 3 hours. Make sure the tofu is submerged in the marinade.
  4. Remove the tofu from marinade and pat it dry with some paper towels.
  5. Prepare the battering stations (first dredging in flour, next in vegan “egg” wash and finely in the breadcrumbs.
  6. Heat a fry pan on medium heat, add enough oil to the pan to fry the tofu nicely.
  7. Fry tofu until golden brown on both sides.
  8. Remove from heat and place on a paper towel to absorb more oil.
