Easy Sourdough Pizza Recipe

Have you ever tried a sourdough pizza before?

It’s healthier than baking with regular yeast since the dough is left to ferment, making it better digestible and raising your blood sugar less than a regular pizza.

And of course, it has its very own highly delicious flavor.

You will notice that a pizza made with sourdough is easier on your stomach and digestion.

Baking with sourdough is a century-old tradition. Before yeast became popular, bread, pizza and other baked goods have been prepared with sourdough instead.

It’s a way of fermenting the dough which later helps with the rise and leavening of the bread.

The best thing: Making your own sourdough pizza is not only delicious, but also quite easy.

All you need is an active sourdough starter to prepare the dough, and then bake it correctly in the oven.

The process consists of five simple steps:

  1. Preparing the dough

  2. Letting the dough rest

  3. Forming the pizza

  4. Topping the pizza

  5. Baking the pizza

INGREDIENTS

  • For the dough (makes 2 pizza portions)
  • 500 g (17.6 oz) bread flour
  • 300 ml (10.1 fl oz) water
  • 10 g (0.35 oz) salt
  • 75 g (2.7 oz) active bubbly starter
  • For the pizza (per pizza)
  • ½ onion
  • 2 cloves of garlic
  • 1 tomato
  • 1 cup black olives
  • 2 tbsp capers
  • ½ cup tomato sauce
  • To garnish (per pizza)
  • 8-10 fresh basil leaves
  • 1-2 tbsp almond paste

INSTRUCTIONS

1. Start by preparing the dough the day before. Mix the flour and water in a bowl, combine until it forms a rough dough, cover it with a kitchen towel, and set it aside for 1 hour.
 
2. After one hour, add the salt and starter and start folding the dough. Take one end of the dough, stretch it up high, and fold over the middle of the dough. Repeat with each side until you’ve gone full circle. Set the dough aside.
 
3. Repeat this folding process for 5-6 times over the next three hours. Afterward, cover it with cling film and leave it in the fridge until the next day when you need the dough.
 
4. To make the pizza: Preheat the oven to 275 °C (530 °F) or your highest setting. You should use a broiler or two-sided heat. If you have a pizza stone, you can use it here and heat it up in the oven.
 
5. Spread flour on the kitchen surface, add the dough. Separate it in two parts using a bench scraper. Take each part and fold the ends to the middle until it’s a dense ball, the flip it around and let it rest for 15 to 30 minutes.
 
6. In the meantime, prepare your ingredients. Slice the onion, mince the garlic, slice the tomatoes.
 
7. Now, spread some flour on your kitchen surface. Take one portion of the dough, push it evenly flat with your knuckles and hands until you have your desired shape. Make sure the edge is thicker than the rest.
 
8. Now, add the tomato sauce on the pizza and spread it evenly. Cover with the tomatoes first, then add the onions, garlic, olives and capers.
 
9. Transfer the pizza to your baking sheet or pizza stone. Bake it in the oven for around 6 to 8 minutes until the edges rise and become golden brown.
 
10. Take it out the oven, then garnish with the basil leaves and drizzle almond paste on top.
