Mashed Brussels Sprouts

Vegan Christmas Sides!

Before you read "Brussels Sprouts" and think of going, STOP!

We know that Brussels sprouts aren't the world's most favorite vegetable, but that's usually because they're not prepared the right way.

Not this time!

You'll be making a creamy mash out of boiled Brussels sprouts topped with crispy tofu and Brussels sprouts chips.

Ingredients

300 g (10.6 oz) Brussel sprouts

¼ cup oat cream (warm)

100 g (3.5 oz) smoked tofu

2 tbsp butter (melted)

Oil

Salt & pepper

Paprika powder

 

Instructions

  1. Start by trimming the Brussels sprouts.  Place inside a pot with boiling salted water and cook until very soft.
  2. Heat oven to 150 °C (300 °F) for the Brussels sprouts chips. Take five of the sprouts and remove the cores. Gently remove the leaves and place them in a bowl.
  3. Toss with a little bit of oil, salt, and pepper, place them on a baking tray.
  4. When the oven has reached the right temperature, place the tray in the oven and roast for 7 minutes or until the leaves start to color.  Pull the tray out of the oven and let it cool.
  5. Shred the smoked tofu using a grater. 
  6. Heat a little oil in a small frying pan. When the oil is hot, add the smoked tofu and cook until the tofu starts to brown for around 3-5 minutes.
  7. Once the Brussels sprouts are soft, strain out of the boiling water and shock them with ice water for just a few seconds.
  8. Place them in a bowl, add in the cream and butter, then mash or puree everything until smooth.
  9. Add a good pinch of salt and pepper as well as a little spicy paprika powder.  Check the seasoning level and adjust if needed.
  10. Transfer the mashed Brussels sprouts to a bowl, then top it with smoked tofu and Brussels sprout chips
