In less than 30 minutes, you have a tower of American-style pancakes topped with maple butter and fruity berry syrup.

Definitely a great way to start a lazy Sunday with the whole family!

Ingredients

For the pancakes

600 ml (20.29 fl oz) soy milk

1 lemon (juice only)

300 g (10.58 oz) flour

Pinch of salt

16 g (1 oz) vanilla sugar

20 g (1 oz) rice syrup (or maple syrup)

2 tbsp baking powder

1 tsp baking soda

60 ml (2 oz) oil

 

For the maple butter

100 g (3.5 oz) butter 

2 tbsp maple syrup

 

For the syrup

250 g (9 oz) water

100 g (3.5 oz) raw sugar

100 g (3.5 oz) rice syrup

50 g (1.76 oz) molasses

150 g (5.29 oz) frozen berries

¼ tsp lemon juice
 

Instructions

 

To make the pancakes

  1. Start by making the buttermilk. Combine the soy milk and lemon juice, and let them sit for 5 minutes.
  2. Mix together the dry ingredients in a large mixing bowl.  
  3. In the buttermilk bowl, add the oil and syrup.  
  4. Add the wet ingredients to the dry ingredients and mix only long enough to incorporate the flour.  (a couple of lumps are okay, don’t overmix)
  5. On medium heat, heat a frying pan until hot (but not too hot), and add a little oil and a teaspoon of margarine.
  6. Add some of the pancake batter to the hot pan, cook until the bubbles pop and stay popped.  
  7. Flip it over and cook for an additional 3-5 minutes.   
  8. Repeat with the remaining batter.
  9. Serve with your maple butter and berry syrup.

 

To make the syrup

  1. In a saucepan mix together the water, sugar, rice syrup, and molasses. 
  2. Bring to a gentle simmer on a low heat and let simmer for 2-3 minutes until all the sugar is dissolved and the mixture starts to reduce.  
  3. Add in the frozen berries and continue to simmer for an additional 10 minutes until the berries have dissolved and the syrup starts to thicken.  
  4. Take off the heat and add the lemon juice.  
  5. Stir and let cool for about 5 minutes. 
  6. Fill into a glass bottle or container, and set aside.

 

To make the maple syrup

  1.  Mix the ingredients together in a bowl and set it aside for 5 minutes.
