Delicious Zoodles Bowl with Fried Capers

Looking for a quick and delicious bowl recipe?

How about a delicious zoodles bowl with cherry tomatoes and a creamy cashew dressing?

It's full of beautiful colors and fresh flavors.

You can add fried capers at the end for that extra crunch and saltiness.

If you like, you can even add some soba noodles or whole wheat noodles.

This bowl is ready in less than 30 minutes, it's a perfect quick lunch recipe.

Ingredients

For the bowl

3-4 zucchini

(Optional) soba noodles, whole wheat noodles

1 small glass of capers

200 g (7 oz) of cherry tomatoes (10-12 pieces)

1 onion 

2 cloves of garlic

Salt and pepper to taste



For the sauce

3 tbsp cashew or almond butter

Hot water

1 lemon

1 tbsp maple syrup
 

Instructions

  1. Start by making the zucchini noodles. Use a spiralizer to cut them into your preferred shape. Then, sprinkle some salt on top and massage them slightly to make them softer. Set the zoodles aside in a sieve for around 5 minutes.
  2. (Optional) If you like, you can also add other noodles, such as soba or whole wheat noodles. If you do, make sure to cook them in boiled water as written on the package.
  3. Fry the capers in a saucepan filled with some oil. Once the oil is hot, add the capers and let them fry for around 4-5 minutes until really crispy. Take them out with a spider.
  4. Make the sauce. Take1/2 to 1 tsp of salt, add hot water, then add the cashew butter. Whisk well until smooth and creamy. Then, add lemon juice and maple syrup, whisk again. 
  5. Then, fry the diced onion and garlic in a pan with a little olive oil. Add the cherry tomatoes and zucchini, toss quickly, and turn off the heat after one minute. 
  6. Lastly, add the sauce and fried capers. 
  7. Enjoy!
