Baked Mashed Potatoes with Roasted Garlic

It's time for another delicious recipe starring those starchy little fellas.

Potatoes are probably one of the most versatile and widely used vegetables around the world, whether it's fries, wedges, or boiled potatoes.

But there's so much more you can do with them.

That's why today you'll learn how to prepare baked mashed potatoes.

Yes, they're first mashed, then baked!

A fluffy and creamy casserole dish with cheesy flavor and a nice crust!

Ingredients

750 g (1.65 lbs) of potatoes

3-4 cloves of garlic

150 g (5.29 oz) cream cheese

125 ml (4.22 fl oz) vegan cream

Vegan butter

Salt and pepper

Chives

Nutmeg


 

Instructions

  1. Start by roasting the garlic. Let it simmer in some oil in the pan for several minutes until it becomes golden brown. Alternatively, you could roast it in the oven. 
  2. Peel and boil the potatoes until soft. Keep a little bit of the cooking water.
  3. Add the cream cheese, vegan cream, and butter to a pot, heat them up until warm, and mix well. 
  4. Mash the potatoes with masher. 
  5. Add the cream cheese mixture to the potato mash, mix with a fork and whisk well. The potatoes and cream cheese mixture should have around the same temperature. 
  6. Add the roasted garlic, salt, pepper, and a little bit of nutmeg, mix again. 
  7. Add to your oven dish, go with the fork through the surface to give it some texture. 
  8. Put the baked potato mixture in the preheated oven at 200 °C (390 °F) for around 1 hour or until it starts to caramelize on top.
